2 cups Belgium endive chopped
2 cups spinach
3 ounces grilled chicken or salmon
1/2 cup bean sprouts
1 avocado
1/2 cup diced cucumber
2 Tbsp sliced almonds
2 Tbsp chopped pecans
Dressing
3 Tbsp. Olive oil
1 Tbsp. Apple Cider Vinegar
2 Tbsp. Lemon juice
1. Cook meat, set aside
2. Mix salad dressing together
3. Toss salad ingredients
4. Top with cooked meat
5. Pour salad dressing over salad
